Swiss confectioners develop new pink 'ruby chocolate'

As Hershey cuts 15 per cent of its staff and Nestle tries to sell its USA chocolate business, ruby chocolate raises the possibility that next Valentine's Day may arrive with store shelves full of naturally pink chocolate hearts.

While there are myriad chocolatiers and confections, for the last 80 years it has been agreed upon that there are three classes of chocolate: dark, milk, and white. While other companies including Cargill already produce red cocoa powder, this is the first time natural reddish chocolate is produced.

Swiss cocoa producer Barry Callebaut has revealed a new type of chocolate: Ruby, a naturally pink chocolate treat.

Even though the new creation is pink, the makers say not to call it pink.

And, by unlocking the attributes of the ruby cocoa bean over the course of several years, its flavours and colouring are natural with no berries or berry flavour added. "They want some indulgence and like different tastes and colours". There are no artificial ingredients.

"The fourth type in chocolate offers a totally new taste experience, which is not bitter, milky or sweet, but a tension between berry-fruitiness and luscious smoothness", it said in a statement. Nestle launched white chocolate in the 1930s. There's no news yet on when the public will be able to get their mitts on Ruby, but you can keep up to date with the latest news here.

The beans used to make ruby chocolate come from Ivory Coast, Ecuador and Brazil.

The item is produced by Barry Callebaut, the world's leading manufacturer of chocolate and cocoa products. Then, there is a unique procedure to get the beans ready. Eater notes that the new chocolate may take almost a year to make it to the U.S.

Zurich-based Barry Callebaut has been stepping up its acquisitions of gourmet food companies, an area where businesses are typically small, family-owned companies operating locally. As of now, ruby is not available in the United States.
